The softer, but still grated cheese is also fine.  Many times I use cheddar cheese or mozzarella.  It doesn&#039;t really matter. I was making some hamburger patties with grated cheese inside, and I used a soft cheese that ended up melting out and making the patties fall apart. I know it&#039;s meat versus bread, but I don&#039;t have very much bread experience and I wondered if soft cheese would add too much moisture rather than just nice tiny cheesey pieces throughout.   

I live in Sweden and the amount of cheese choices here is ridiculous, so I&#039;ve started cooking less on name of cheese types and more on &#039;hard, soft, aged, crumbly, stringy, easy to melt, etc.&#039;   You know, like the difference between a really hard parmiggiano or just a soft household cheese.</description>
